If you’re a food enthusiast, you’ve probably heard of the famous “farm-to-table” trend. However, celebrity chef Brian Malarkey, who hails from Oregon, is taking a unique approach by opening a “ranch-to-plate” restaurant in central Oregon. Malarkey is well-known to fans of culinary TV, having appeared on popular shows like “Top Chef” and “Good Morning America.” His new restaurant, Hawkeye & Huckleberry Lounge, is set to open on June 16th in Bend.

According to his website, Malarkey’s upbringing on an Oregon ranch and summers spent relishing fresh seafood on the coast sparked his passion for food. This led him to pursue studies at Le Cordon Bleu in Portland.
Malarkey, a renowned restaurateur who has established multiple dining establishments in San Diego and Orange County, California, is now embarking on a new venture that pays homage to his central Oregon heritage. In partnership with his brother, James Malarkey, he is bringing forth Hawkeye & Huckleberry Lounge, a restaurant that celebrates the brothers’ deep-seated connection to ranching and rodeo in Oregon. The restaurant boasts a modern cowboy vibe, complete with wood-fired ovens and live music.
The upcoming Hawkeye & Huckleberry space, spanning 11,000 square feet, will offer canvas tent semi-private dining spaces, a seasonal outdoor patio complete with a designated “Kids Camp” area, and a stage within the restaurant to host both local and touring musical acts. Additionally, the venue will provide event destination spaces including a private dining room.
According to press materials, Chef Malarkey, in partnership with Chef Tony Torres, will showcase chickens and beef raised at their nearby ranch in Tumalo, P-B Hawkeye Ranch. The restaurant will also house its butcher shop and smoker to process and preserve entire animals, ensuring that every part is utilized, waste is minimized, and unique, high-quality steaks are offered at accessible prices. The ranch is currently growing lettuces, microgreens, sunchokes, and onions, while other ingredients, like 100% Oregon pork, are locally and thoughtfully sourced.
The menu at this restaurant includes not only extravagant items but also some unique dishes. You can find beef tongue tostadas, Campfire Cornbread, bay shrimp cocktail, summer vegetable pizza, Columbia River salmon, and more.

The Hawkeye & Huckleberry Lounge, located at 225 S.W. Century Drive in Bend, will be operating from Sunday through Thursday, 4-9 p.m., and Friday and Saturday, 4-10 p.m. They also offer Happy Hour from Monday to Friday, 4-5 p.m., and Industry Nights on Mondays.
